To get the outside as smooth as I can, I work from the inside-out. I try and sculpt the sponge as neat as I can first. Then smooth the butter-icing
on as evenly as possible, then the icing should go on smooth. It helps if the icing is fairly thick...about a quarter of an inch. Then I go over it with a cake
smoother or my hands.
